I always bring in baking for the office every week. I like to think it’s something fun that everyone looks forward to. (Plus it’s a little unhealthy if I eat all of it myself.) So I thought I should share the recipes I make every week with you lovely listeners/readers out there. This week I made a Royal Marble Cheesecake. I know that cheesecake is a favourite in the office and it had been a minute since I last made one. So, I decided to whip up this decadent treat and boy, oh boy, did it turn out amazing!

Now, I must confess, I am no professional baker. In fact, I’m just an average person who happens to have a delicious hobby. So, if you’re looking for fancy techniques and complicated recipes, you might want to stick with the experts. But if you’re up for a good time and some deliciousness, then keep on reading!

Let’s talk about this Royal Marble Cheesecake. First off, can we just appreciate the beauty of marbled desserts? The swirls of contrasting colors are like edible works of art. For the crust, you’ll need:

  • 3/4 cup all purpose flour
  • 2 tablespoons sugar
  • Dash salt
  • 1/4 cup margarine or butter
  • 1 cup semi-sweet chocolate chips, melted

For the cheesecake filling, you’ll need:

  • 3 bricks cream cheese, softened
  • 1 cup of granulated sugar
  • 1/4 cup all purpose flour
  • 2 teaspoon of vanilla extract
  • 6 eggs
  • 1 cup sour cream

And here’s how you bring it all together:

  1. Preheat your oven to 400°F.
  2. In a small bowl, mix the 3/4 cup flour, 2 tablespoons sugar and salt. Using pastry blender or fork, cut in margarine until mixture resembles coarse crumbs. Stir in 2 tablespoons of the melted chocolate. Reserve remaining chocolate for filling. Press in bottom of ungreased 9-inch springform pan to create the crust.
  3. Bake at 400°F for 10 minutes or until very light brown. remove from oven. Reduce oven temperature to 325°F.
  4. In a large mixing bowl, beat the cream cheese and sugar until light and fluffy. Add 1/4 cup flour and vanilla; blend well. At low speed, add in the eggs one at a time, beating until just blended. Add sour cream; mix well. Place 1 3/4 cups filling mixture in a medium bowl; stir in reserved melted chocolate.
  5. Pour about half of the plain filling over the crust. Top with spoonfuls of half of the chocolate filling. Cover with remaining plain filling, then spoonfuls of remaining chocolate filling. Using a table knife, swirl chocolate filling through plain filling.
  6. Bake in the preheated oven for about 60-75 minutes, or until the center is almost set.
  7. Cool 10 minutes; remove sides of pan. Cool 2 to 3 hours. Refrigerate 8 hours or overnight before serving. Store in refrigerator.
