About a decade ago, my mom handed me a stack of Kraft What’s Cooking magazines she was getting rid of, and I had a blast cutting out recipes to try as I learned to cook and bake. Over the years, I made many of them, but during a move, some of those precious cutouts got lost.
Fast forward to today, and fate has its way of working some magic. Marcella in Rama, a longtime contributor of the GX94 Christmas Goodies Cookbook, sent us some recipes to be featured in this year’s edition of the cookbook. Tucked inside the envelope was one with a special note addressed to me, suggesting it as the perfect recipe to try. To my surprise, it was one of my long-lost recipes: Easy Eclairs!
Of course, I had to bake it, and let me tell you, it was totally worth the wait! Everyone at the station loved it, and it’s safe to say this one will definitely be making an appearance in this year’s GX94 Christmas Goodies Cookbook!
