Turning Frozen Bananas into Office Happiness: My Banana Muffins

Let me tell you about my latest baking that turned out to be a real treat for everyone at the office! It all started when I found a bunch of bananas just chilling in my deep freeze. They were just waiting for a purpose, and what’s a better purpose than being made into delicious banana muffins?

I decided to go all out and bake a whole bunch, six dozen to be precise! Yes, that’s 72 banana muffins. But I didn’t want to make just one kind of muffin. Life’s too short not to mix things up a bit, right? So, I added a variety of yummy add-ins: chocolate chips, nuts, and colorful M&Ms. The result? A delightful mix of flavors that made these muffins totally irresistible.

I followed a simple yet delicious banana muffin recipe that my mom uses all the time! This recipe can also be made as a banana loaf too.

Ingredients:

  • 2 large eggs
  • 3 medium ripe bananas, peeled
  • 2/3 cup brown sugar
  • 1/3 cup canola oil or melted shortening
  • 1 tsp. vanilla extract
  • 1 tsp. banana extract
  • 1 3/4 cups all purpose flour, sifted
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup chopped nuts or chocolate chips

Instructions:

  1. Preheat oven to 350°F. Grease muffin tins or use paper liners. Set aside.
  2. Break eggs into a medium mixing bowl. Beat until blended. Cut bananas into pieces in bowl with eggs. Mash with a fork and mix with eggs. Add brown sugar, oil or melted shortening, and the extracts. Beat until well mixed.
  3. Sift flour, baking powder, baking soda, and salt together into banana mixture. Mix until dry ingredients are just incorporated, adding the nuts or chocolate chips about halfway through the mixing process. Pour into prepared muffin tins.
  4. Bake for 20-25 minutes, or until toothpick inserted into centre of muffin comes out clean. Remove from oven. Transfer muffins to cooling rack. Cool completely. Tastes even better the next day!

When I brought the muffins to the office, they were an instant hit! Everyone was confused as to why I made so many but thought they were delicious regardless. They were gone in no time, some even took some home. There’s just something heartwarming about sharing homemade goodies with friends and co-workers.
